We met him at the latter, where we had the pleasure of speaking with him about the changes he's seen in the Las Vegas dining scene over the past 27 years, his future expectations, his inspiration for the original Andre's and why he opened a second Andre's at the Monte Carlo. This is a fascinating look at the man who is credited with starting fine dining in Las Vegas.
